Making homemade traditional Greek yogurt is extremely easy, just as it has been for hundreds of years. It requires a little patience because the fermentation process takes time. However, this is definitely the healthiest yogurt.

  • First add all the ingredients to a saucepan over medium heat and bring to a boil.
  • The ideal temperature is about 85 degrees. It is a good idea to use a kitchen thermometer if you have one. If you don’t have one, you can try it with your finger by putting it in the milk and if you can leave it there for at least 5 seconds, it’s at the right temperature.
  • When the mixture boils, allow it to cool for about 15 minutes.
  • Then pour the mixture into an airtight container, place in a warm place and leave to ferment for 8-10 hours.
  • After that time, strain the yogurt into a different container. To do this, you need to use gauze or a cheesecloth and strain its contents.
  • You can also let the yogurt drain itself in the refrigerator, as this process can take a while.
  • Finally, when the yogurt is ready, pour it into smaller jars. The remaining liquid in yogurt is milk serum: you can drink it or use it in other recipes.
  • Now you can enjoy delicious homemade Greek yogurt.

Suggestions

  • The oven is the best place to leave yogurt to visit. You can put it to warm to a low temperature, turn it off and put the jar containing yoghurt in the oven.
  • If you don’t have an airtight jar, you can use a bowl, put a cloth on top of it, and close it with a plastic food wrap or bag.
  • If you want the yogurt to have a firmer texture, add 1-2 tablespoons of milk powder. It gives the mixture thickness before the fermentation process.
  • If you prefer low-calorie yogurt, you can use lighter ingredients such as skim milk and skim natural yogurt.
  • It is much more advisable to use liter volumes in each container you want to prepare.
  • If you use goat’s milk, the time spent on the fermentation process should double to 20-24 hours.
