The recipe we share below isn’t actually light, but it’s very delicious. Of course, the recipe can always be modified to suit celiacs or your own diet, we will give tips at the end of the article.

This recipe has a sip of alcohol; a tablespoon of rum is added to the cake at the manufacturing stage. If you want a child-friendly version of the recipe, you can leave the rum worry-free without much effect on taste.

Ingredients for the cake base (for 15 cm cake tin)

  • 2 packets of graham biscuits or other similar biscuits
  • 125 ml of melted butter

Ingredients for the filling

  • 250 g of cream cheese
  • 200 ml of condensed milk
  • 150 ml of coconut yogurt
  • 200 ml whipped cream
  • 200 g of canned pineapple (pieces)
  • 14 g of unflavoured gelatin
  • 1 tablespoon light rum (optional)

Note: If you don’t like coconut yogurt, you can use regular unflavoured yogurt instead.

For decoration

  • Pineapple slices (optional)

This is how the Piña colada cheesecake is made without the oven

  • Properly grease a 15-cent cake pan with a removable base. It can also be lined with baking paper.
  • Crush the graham cookies and mix in the melted butter. This mixture is the base of the cheesecake.
  • Whip the cream cheese in a bowl until soft and fluffy.
  • Add yogurt and condensed milk. Hit again.
  • Add pineapple pieces and rum to the yogurt, cream cheese and milk. Set the mixture aside.
  • Whisk the cream so that it forms sharp spikes when lifted. The composition must be the right kind before the cream is mixed with the rest of the filling.
  • Gently mix the whipped cream with the rest of the filling (the one you put aside).
  • Follow the instructions on the gelatin package to moisten it and then add it to the mixture. Mix it gently so that the airiness of the filling is maintained.
  • Then pour the filling over the graham biscuit base.
  • Keep in the refrigerator for at least two hours.

Different variations of the recipe

  • If you want the cake to be fluffier, you can use a thin wrap cake base.
  • If you don’t want pieces of fruit in your cake, crush the pineapples and mix them into the filling with puree.
  • Does whipping the cream cause problems? Here’s one trick: put the cream in the frost for 10 minutes before whisking. This way it is better in composition. If you still don’t get it whipped properly, you can add one or two tablespoons of sugar to it to speed up the formation of the right composition.
  • The calories in the cake can be reduced by replacing graham biscuits with low-calorie biscuits that are moistened with water. Cream cheese, in turn, can be replaced with low-calorie Philadelphia cream cheese. Yoghurt can be used instead of high-sugar condensed milk.
