Ingredients for marinated chicken

  • 3 skinless chicken or chicken breasts (700 g)
  • 1 onion
  • 2 peeled garlic cloves
  • 1 lemon
  • 1 hibiscus flower
  • 500 ml of coconut milk
  • a touch of paprika powder
  • a touch of ground cheese cumin
  • 2 tablespoons olive oil
  • a touch of coriander
  • a touch of fennel
  • 10 g ground black pepper
  • 125 ml of tomato paste
  • 120 g of white rice
  • 10 g of salt
  • 125 ml of vegetable broth
  • a touch of grated ginger

This is how you make chicken and rice marinated in coconut milk

  1. Clean, rinse and chop the Chicken Breast Pieces.
  2. Put the chicken pieces in a medium bowl and sprinkle with salt and pepper.
  3. Add the following ingredients: lemon zest and juice, crushed hibiscus flower and grated ginger. Mix well and refrigerate for at least 40 minutes.
  4. Chop the onion and garlic cloves.
  5. Brown the onion and garlic in a pan in  olive oil.
  6. Add the chicken pieces, raise the temperature and brown the chicken as well. Cook for 10 minutes.
  7. Sprinkle with spices,  pour in the tomato paste and allow to cook while stirring.
  8. Next, add the white rice and continue stirring for two minutes before adding the coconut milk and vegetable broth.
  9. Put the stove on low heat, cover with a lid and simmer for 30 minutes.
  10. Pay attention to the amount of fluid; the rice may dry out the pot a little. In this case, add a little more water and simmer for a few more minutes until the composition of the food is just right.
