1. Quinoa vegetable salad

Ingredients

  • 200 g of quinoa
  • 250 g sugar peas
  • 50 g sliced ​​almonds
  • 3 dl mineral water
  • 50 g finely sliced ​​green onions
  • 25 g of olive oil
  • Purple cabbage (to taste)
  • 2 grated carrots
  • 1 red pepper, sliced
  • Salt and pepper (according to your taste)

Manufacturing

  1. Soak the quinoa at least 2-3 times in water or under plenty of running water in a colander.
  2. Put the salted water in a saucepan to a boil and add the Quinoa. When the water starts to boil, lower the temperature and keep the stove covered with a lid for 10-12 minutes.
  3. The ripe Quinoa looks translucent and has a white “tail”. Strain it and let it stand for 10 minutes.
  4. Steam the sugar peas and dry them.
  5. Stuff the quinoa with a fork.
  6. After the Quinoa and sugar peas have cooled, mix all the remaining ingredients in a bowl with salt, pepper, vinegar and olive oil.

2. Quinoa broccoli salad

In addition to quinoa, this salad contains not only broccoli, but also other very nutritious ingredients. Quinoa broccoli salad can even be taken to work for a full lunch!

Ingredients

  • Salt (according to your taste)
  • 40 g of cucumber
  • 1 lemon
  • 1 tomato
  • 3 cloves of garlic
  • 1/4 white onion
  • 4 dl of water
  • 200 g of quinoa
  • 100 g of broccoli
  • 1 yellow pepper
  • 1/4 teaspoon ground black pepper

Manufacturing

1. First rinse the Quinoa in a sieve under the tap. Allow the water to drain away.
2. Pour Quinoa and 4 dl of water into a saucepan, where you also put 1/4 onion, garlic clove and a teaspoon of salt.
3. Boil this mixture. When the water starts to boil, lower the temperature and cook for about 15 minutes or until the water has evaporated.
4. Next, cut the broccoli into small pieces and place them in boiling water for 1 minute. Dry and save for later.
5. Peel and chop the cucumber into small cubes. Do the same for the red peppers and tomatoes.
6. To make the vinaigrette, mix together in a bowl the olive oil and the juice of one lemon, two chopped cloves of garlic, half a teaspoon of salt and a quarter of a teaspoon of black pepper. Mix well.
7. After the Quinoa has cooled, mix it in a bowl with the broccoli, paprika, cucumber and tomato.
8. Iron the vinaigrette on top and put in the refrigerator.

3. Quinoa corn salad

This nutritious quinoa salad is the easiest of the three to prepare, so we recommend trying it. It will be completed in just 10 minutes!

Ingredients

  • 100 g of quinoa
  • 50 g of corn
  • 12 black olives
  • 12 cherry tomatoes
  • 50 g grated carrots
  • 1 diced avocado
  • Extra virgin olive oil (to taste)

Manufacturing

1. Wash the Quino well in either a sieve or bowl by soaking it at least three times. The purpose is to wash off the saponin on the surface.
2. Then wash the olives and cherry tomatoes thoroughly.
3. Start cooking quinoa according to previous instructions or packaging instructions.
4. After the Quinoa has cooled, place it in a bowl and mix with the other ingredients.
5. Sprinkle a little olive oil on top to moisten the salad and give it flavor.
