Pork ribs with mold cheese

Mold cheese goes well with this type of meat

Ingredients (for 3-4 people)

  • 50 g fried onions
  • 50 ml of white wine
  • 5 fillets of pork ribs (approx. 750 g)
  • 125 ml of thick cream
  • 1 teaspoon chili powder
  • Spices: sea salt, Provencal herb blend
  • Olive oil (quantity required)
  • about 500 g of blue cheese
  • Optional: fresh parsley, butter

Manufacturing

1. Preheat the oven to 200 degrees Celsius.
2. Clean the fillets and place them in an ovenproof dish. Season with plenty of sea salt and olive oil.
3. Set aside for 10-15 minutes. Then sprinkle with chili powder.
4. Bake the fillets for 20 minutes at 220.
5. After the first 15 minutes, take out of the oven and pour the white wine over the fillets. Put back in the oven.
6. Cut the mold into thin slices.
7. Put the cream in a saucepan over medium heat. Before it boils, add the slices of mold cheese. Stir constantly so that both ingredients mix well and begin to form a cream.
8. When the cream is thick enough, add the Provence herb mixture and continue stirring over low heat for about 2-3 minutes. If the sauce is not thick enough, add a little butter or cream.
9. When the pork fillets are ready, turn off the oven, take the baking dish out of the oven and pour the cheese cheese sauce over the fillets.
10. You can garnish with a touch of Provencal herb mixture and fresh parsley as you serve.

Ingredients (for 3-4 people)

  • 1 cinnamon stick
  • 8 red apples
  • 2.5 dl of water
  • 100 g of sugar or honey
  • Optional: 1 lemon juice

Manufacturing

1. Wash and peel the apples. Discard the huts and chop the apples into strips.
2. Put the apple strips in a saucepan of water over high heat.
3. When the water boils, lower the temperature and add the cinnamon stick, lemon juice and sugar. Continue to stir so that all the ingredients mix well.
4. Let everything cook for about 40-45 minutes.
5. Then turn off the stove, remove the cinnamon stick from the pan and pour the apple sauce into the bowl.
6. Mix with a hand mixer. The purpose is to make the puree thick and uniform.
7. Pour the mixture into a bowl and put in the cinnamon sticks.
8. You can serve the apple puree hot or cold.
